A still bottle can be opened a little clumsily and still stay quiet about it. A sparkling bottle will not. The moment you touch the foil you're managing several atmospheres of pressure, and every bit of tension in your hands, every degree the wine is too warm, every rushed pour shows up instantly — as foam, as a loud pop, as a cork that gets away from you. This is the service where technique becomes visible whether you want it to or not.

That's why it earns a place in the Certified Sommelier practical: the exam may ask you to open still or sparkling wine and field beverage, salesmanship, and pairing questions in a restaurant-style setting. Opening the bottle without a bang is only half of it. The real test is whether you can hold that pressure under control while keeping the guest comfortable and the moment feeling like the celebration it usually is. Keep three things true at once and you're most of the way there: the cork is always under your control, the guest is always at ease, and the wine reaches the glass at its best.

Temperature is a safety decision

Before anything else, sparkling wine service is about temperature — and temperature is not only about how the wine tastes. A warm bottle carries more pressure and is far more likely to foam over or fire the cork. So the first question is whether the bottle is properly chilled, and whether it has been sitting undisturbed rather than recently moved or shaken.

While you're checking that, run through the rest: the right bottle, producer, and cuvée; vintage or non-vintage status confirmed; clean and appropriate glassware; an ice bucket or cooler ready if you need it; a napkin or towel in hand; clear table space; and the host identified. If the bottle is too warm, solve that before you open it. A candidate who opens a warm sparkling bottle and loses control has manufactured an entirely preventable problem.
