Section titled “Advanced Practical Checklist”The Advanced practical, or service, exam is a full simulation of the floor at its most demanding, run in front of examiners who expect a working master’s composure. You are not just opening bottles cleanly anymore; you are decanting, correcting orders, fielding rapid theory questions, making decisive recommendations, and keeping a warm, hosting presence while several pressures stack at once. This is where theory, tasting, and floor craft finally have to arrive as one performance rather than three separate exams.
What the Advanced practical tests
Section titled “What the Advanced practical tests”Expect a realistic, high-pressure service scenario that blends technical execution with knowledge and hospitality. You may be asked to open and decant multiple bottles, recommend across an extensive list, answer detailed theory questions on the spot, spot and handle errors, and manage a table’s needs smoothly the entire time. The examiners are measuring integration: whether you can hold accuracy, speed, and genuine graciousness together when any one of them would be easy to drop.
Confirm you can perform under stacked pressure
Section titled “Confirm you can perform under stacked pressure”Rehearse a full scenario with a demanding partner and check each line.
- Can you open still and sparkling wine and decant flawlessly while talking to guests?
- Can you recommend confidently across a broad list, including obscure and high-value bottles?
- Can you answer theory questions mid-service without your hands or your pacing faltering?
- Can you detect and correct a deliberately planted error (wrong wine, wrong glass, flawed bottle)?
- Can you manage several tasks and timing pressures at once without visibly rushing?
- Can you keep a warm, hosting tone through all of it, so the craft never reads as cold?
- Can you recover from the unexpected and continue as if it were routine?
Any line you can only do when calm and uninterrupted is a line the exam will expose.

Candidates who drill these skills separately often collapse when the exam braids them together. Practice them combined.
A simulation drill
Section titled “A simulation drill”Have a partner run a compressed service scenario with permission to interrupt, plant one error, and ask two theory questions while your hands are busy. Set a timer so the pressure is real. Afterward, write down the single moment where you dropped one ball to save another, and rehearse that transition until it stops costing you. The Advanced practical rewards the candidate who makes a hard, multi-tasked scenario look unhurried, and that look only comes from repeating the whole braided performance, not its parts.
